Flank is one of the great underrated cuts. Bold, beefy flavour with a loose, open grain that soaks up a marinade beautifully. At 3kg it's ideal for feeding a crowd or a week of great meals.

Inspiration: Marinate for up to 4hrs in olive oil, garlic, lemon juice and brown sugar. Cook hot and fast over a high heat. Rest well, slice against the grain and serve with smashed potatoes, and a spicy salsa verde.

Provenance: Omugi means "barley" in Japanese and barley is what sets this beef apart. Pasture-raised and finished on a custom barley ration, giving Omugi cattle their distinctive depth of flavour and light, fine-grained marbling.
